Sweet Mackerel and Onion

 

I’m baaack~!! Just finished work, yesterday was my last day, so my sister’s, feels awesome to be at home in the weekend, well, it’s usually like this but… anywayy.. I kept postponing blogposts this past few weeks now I’m here to make it up. Some bentos/lunchs I took, this was the last one.

Sweet onion and sweet mackerel, nom-nom! I remember I never liked onions before I got here, neither mushrooms or a few other things. You know what they said about this? You’re getting older, hence you like things that you didn’t like before…sigh. I guess they’re right..?

Ingredients:

Mackerel:

1 Mackerel

1/2 sweet onion

1 tbsp soy sauce

 

Salad:

2 leaves romaine lettuce

2 egg white

1/4 cup chickpeas

1/4 cup green pepper

 

Sweet yam

 

How To:

Heat the skillet and spray some oil, slice the onions, caramelize (cook) it for about 10 minutes, add mackerel and cook for another 20 minutes.

Add soy sauce and salt and pepper.

Easy as pie, but easier.

 

Baked Seasoned Potato

Cutting out french fries and make your own bake potato, more healthy and more seasoned. It’s good for snacks or for side dishes. Did I sounded like and advertisement just now?? ..I’ll keep this post fast..

Ingredients: (for 2 serving)

2 medium sized potato

salt and pepper

honey

olive oil

paprika

basil (oregano works too)

How To:

Cut the potato just like french-fries-kinda into same thickness, really try to be as even as possible so it’ll baked the same time. Put it in a bowl add about 1 tsp olive oil, and 1 tbsp honey, toss it evenly. Add the rest of the seasoning. Lay them to oven tray, spray it with cooking spray first, arrange  the potato so it won’t touch to the other. Bake in 350F for about 30-40 minutes. Depend how you like it done, we like it not to be as crispy as french fries so it still has the potato texture…..haha, sounds so weird somehow.

You can leave the skin on of peeled. Hope you try this!

Baked Stuffed Chicken and Mushroom

Good morning ya all, I don’t have work today but woke up so early without alarm, my body alarm’s kinda get the habit of me waking up early nowadays, I even always wakes up 5 minutes before the alarm ring! I don’t remember I’ve ever been a morning person, ever, and never thought that I can handle it. Maybe it’s because the fatigue I’m having each day lately so I always ended up having a good night sleep. Which is good, feels so fresh and the day seems longer, I also can manage my 5 times per day eating, so it’s all good.

Pinterest has been taking away my life right now, such an addicting site, this one dish I’m gonna show you right now is aspirated by some of the recipes there. This one is my own personal recipe though. Now, if you buy 3 chicken breast and you cooked two of them for two person, and leaving you a single chicken breast, you might wonder how to divide it so you both get to eat some. This happened to us too, before we fight for the chicken breast by pulling each side, lol, I decided to split  a 1.3lb chicken breast side way and stuff it with slightly sauted spinach, chop of mushroom stems and cheese, now that I’m writing this I just remember I should’ve add bacon bites for more crunchy-ness..sigh. So here’s the juicy chicken breast that everyone adore!

Ingredients: (2 person)

1.3 chicken breast

1 cup chopped spinach

shredded mozzarella and cheddar cheese

olive oil

honey

2 mushroom

salt and pepper

basil

How To:

Slice the chicken breast in two, and pound it a bit so it’s easier to stuff later. Marinade it with a dash of olive oil and honey, and sprinkle salt and pepper, add basil, oregano or pepper would be a good option too! Put it aside and let it absorb the seasoning, while waiting saute the chopped spinach for about 1 minute in medium heat, set aside. Cut out the clean washed mushroom stem and chop it finely, mix it to the spinach and the fun part begins. Take some part of the filling and spread it on the chicken, add the cheese on top and roll it, seal the chicken with toothpicks so it holds while it cooks later. Do the same with the other breast. For the mushroom, stuff them with the rest of the left over filling, don’t forget to season the mushroom too. Bake them together in 350F, the mushroom takes about 10-12 minutes and the chicken should take around 25-30 minutes.

You’ll surprise how juicy the chicken would be later, it’s an instant favourite for us!

We had baked orange bell pepper aside and baked seasoned potato.

Chocolate Cinnamon Pancake

Now, now, I’m trying my best to update this daily but lately we’ve been busy with moving out, it was a hectic last weekend, packing, lifting boxes, suitcases we didn’t realize we have like 234092713 stuff.. sigh. I was working as usual today but taking a couple of days off from tomorrow just to continue the moving, last stuffs and another suitcases and boxes x( I all worn out and if I don’t update this blog for the next couple of day I probably dead haha.. anyway, skip the chatty, time for a breakfast goodie!

 

Now is that pretty or what. The recipe was taken from Sparkpeople, and no, I don’t really use that site, I just found about it a week ago, pretty cool but so many things going on so I stick with my previous one. The recipe’s pretty simple made for 8 serving with roughly 100cal per serving (1 pancake).
Ingredients:

1.25 cup whole wheat flour

1 tsp baking soda

2 tbsp sugar

1 cup milk

0.5 cup egg beaters or other substitute

1 tbsp vanilla extract

2 tbsp cinnamon

1 tbsp unsweetened chocolate powder

 

How To:

Mix all the dry ingredients in a bowl. Mix milk, eggs, and vanilla in another bowl. Beat the wet ingredients to the dry ingredients’ bowl roughly so it’ll gives the dough more air, makes it puffy, and then you add the cinnamon last. Use 1/3 cup for one pancake measure, and don’t forget to spray your pan with cooking spray!

 

Scramble Tortilla

Just trying a whole wheat Tortilla for this week, pretty fun to make I must say, but talking about Tortillas it’s all about the filling. The second image’s pretty much what’s the filling, I put the rest on separate container just so I have something to eat for later in the evening at work. Baby carrots for snack!

Ingredients:

Beef slice

1/2 cup chopped mushrooms

1 cup chopped spinach

1/4 red bell pepper

1 or 2 white eggs

1/4 cup mix cheese (I use mozzarella, cheddar and jalapeno cheese)

Cucumber for side meal, kinda

 

How To:

Heat pan and spray with cooking oil, add the beef slice (cold cut) and the spinach to thaw it.

Add the white eggs and the rest of the vegetable, cook around 2/3 minutes turn off the heat and add the cheese, mix.

When the cheese melts already put it on top you Tortilla, roll it up!

You can also cook your Tortilla, I love it cooked, heat up the pan, spray oil and put the Tortilla,

cook until browned while adding the filling on it. Fold it while it’s cooked, don’t roll or you’ll mess up the filling.

And spray a bit of oil and cook the other side. Crispy on the outside and cheesy melts inside! Had that for breakfast this morning. Mmm..

 

 

Rib Festival

Back again, I was too tired to post about the rib festival yesterday so here I am reporting to you guys that rib festival was awesome. Rib heaven, ribs everywhere, it’s such an honor to be able to come to a country that make a festival for rib…coughcough. Anyway, yes we did walk around 5.6K to the fest and walk back home, the walk was pretty fun although we were a bit soaked on the way home, damn you rain. The festival wasn’t that crowded as I thought, the days before were crazy packed of human sardines, I thought we would end in the same condition, but since it was the last day everything was pretty chill. We met up with two of out friends, whenever we meet them we’re usually go for wings or lunch or whatever that include food. I don’t know if this is bad or not lol. But yeah, prepare for the ribs!

It was my first time trying onion bloom, it was awesome I won’t lie, but kinda gross since there was so many oils under it…although we managed to finish it only for both of us. I found the recipe how to make this in a healthier way, bake, bake, bake. I’ll try it out around this week if I have time. Oh, we’re gonna be a bit busy moving out this weekend, I’m pretty excited cause I haven’t see the place, my sis did, and we’re waiting for our brother to come too around mid August. More reason to cook….. .__. haha

Wait, the food’s not finish yet, we bought ice creams for dessert.

The vanilla one was mine, it was mixed with black cherry ice cream underneath, again, my first time trying black cherries ice cream, instant favorite! I wonder where I can find this flavor, or is this normal and it’s just me who missed out.

And my sis with grape slushy, we share the slushy and you might know why -.-; so many foods….

On the way home I notice this stickers slapped around.

The most genius slap I’ve seen so far, I feel like pull it off and taking it home. Now back to normal, eating healthy, healthy healthy!

Spinach Salmon Quiche Muffinied

Staying at home on Saturday and not having any plan to do anything is boring, while waiting the sun goes down so I can run I look for Quiche recipe. I never heard about it until a couple of months ago so today I try to make one. Quiche Muffins!

 

Cute isn’t it? That white stuff is plain yoghurt, I added it just for a little neutralizer after.

Since today’s Saturday and I have more time in doing preparations, I took pictures of step by step how I made this. First thing first though..

 

Ingredients:

2 tbsp olive oil, or canola oil

1/2 cup onion chopped

1 garlic clove (chopped)

3 ounces fat-free cream cheese (I used Balkan plain yoghurt instead)

6 eggs (I used 3 whole eggs and 3 egg whites)

1 cup milk

1/4 green onion (chopped)

1 cup cheddar cheese (chop, chop, chop every single thing)

1 ounce thawed spinach

2 of 6 oz salmon fillet

1 cup mushroom (chopped)

1/2 red bell pepper

salt and pepper

 

The salmon and the ones in the brackets are the ones I tweaked, I just took the overall recipe based on some sites here and there and from Pinterest so yeah.

How To:

First I saute the onion, garlic and added the mushrooms, and red bell pepper for a bout 3 minutes with one tablespoon of olive oil, and add the spinach, let it cooked for another 2 minutes. The smell.. the smell!

Set it aside, add another spoon of olive oil for the salmons.

After all cooked, toss them all into one big bowl along with the eggs, milk, cheese and green onion. Don’t forget to put salt and pepper, I remembered not putting them in after I pour 3 muffins already so I took them out and mix it again, sigh.

Then comes the cute part, put them in muffin pans, I put the other 6 tomato paste on top, it makes it better, I should’ve put it into all of them.

 

Bake at 375F for 12-15 minutes.

Aww yeaaah.. roughly 120 cal each.

And I had strawberry yoghurt too, I love plain yoghurt with fruits.

 

Yesterday after work I went to Dollarama to buy some snack for the way home, I usually grab my favorite apple chips but this one grabbed my attention. I took the wrong side for the pictures by the way, it called Thin Wheat from Urban Classics. I can’t stop eating it, it’s finished already, I got to buy a bunch of them tomorrow. The taste reminds me a lot of this crackers I ate a lot, used to be one of my fave back home, it’s called Saltcheese, I wonder if I can find it here in Asian Market or something..

Ok, that’s that for now, still can’t wait for the rib festival tomorrow! Until then, Quiche, has been muffinied! Yes I made that word.

 

 

Baked Salmon with BBQ Mushroom

So, I’m keeping this blog alive and got a few response, made me excited and the will to keep on posting. Go thumb power! Thank you for those who’s checking this blog out, even though there’s not many fancy recipes but it might gives you idea for a meal plan and if you’re lazy to cook haha. Anyway, I’m posting this one from my work place, I’ve done my stuff so while waiting for the next task I spent my time playing games online posting this. I just had my lunch, which is baked salmon with mashed potato and bbq mushrooms on top, the guy sitting beside me kept glancing on my food cause it smells so good.. just kidding.

 

Nothing fancy, just a plain baked 6oz Salmon piece, I like it plain for salmon. The flavour comes from the bbq muchrooms, they were baked for about 10 minutes with the salmon, and placed on top of salt and pepper mashed potato, mmmm.
I still have my Popeye Salad for dinner, I only added bbq flavored canned beans on top, giving it more flavor! Can’t wait for dinner.

 

Getting near to the weekend, me and sis are planning to go to rib fest this Sunday, and since we’re going to get huge ribs, we’re going to the place walking.. it’s about 3.4 miles  away from home, don’t worry we walked all 4.3 miles last week so it shouldn’t be a problem, except this time we have to go back which means another 3.4 miles. I’m totally looking forward to this weekend, the ribs are going to be a treat for sure. Look forward for the pictures!

 

Popeye Salad

 Hi, I’m back with another recipe, a spinach salad this time, yes, yes, Popeye salad, I made that up. Pretty easy and quick to make, I usually have 30-45 minutes to prepare lunch boxes, I have longer time but I just don’t want to spend all of it just for making lunch box. I go to my room and kill my time browsing and checking emails instead till the time I go to work.

This is honestly my first time trying a salad with spinach, the spinach itself is less tasty than lettuce, and that’s why we mix it with bunch of tasty ingredients kids.

 

Ingredients:

Baby Spinach,

hard boiled egg/s (mashed),

red bell pepper,

cheddar cheese,

avocado,

a little bit of almonds..or lot of them.

 

Don’t ask me how to make a salad please. Just kidding! ..no, seriously.

And yes, if you notice that is left over baked crumb basa from the day before, I don’t know if you can see the salt and pepper seasoned mashed potato though.

Baked Bread Crumb Basa

I woke up an hour earlier just to jog cause last night was sooooo hot outside. Good thing it’s just for one day…for this week at least. Today was the first time trying to jog in the morning, feels pretty good since I went to sleep with pretty hard detirmination to jog haha. Anyway,  trying a new recipe for today, we’re having fish for this week, Basa and Salmon, I’m being a super cool chef today, it’s my sis’s day off so I cook for her brunch too with fancy serving, just cause I can.

This is the one that I brought to work, bread crumbed bass fillet, green peas, baby spinach, slices of cheddar cheese, white egg (cause I had one already for breakfast), strawberries on the side and I ate the apple before it goes to my bag, oopsies.

Aaanddd, the fancy version.

Ingredients:

For the Basa:

1 basa fillet

bread crumbs

1 beaten egg

salt

pepper

vinegar or lemon juice

How To:

Cut out the basa fillet into 3 or 4 parts, pat it with kitchen towel a bit to dry it, season it.

Dip it into the beaten egg, and cover with breadcrumbs.

Put it in the oven, 350F for 15 minutes, flip them and wait for another 5 minutes.

Serve with boiled green peas, egg, spinach and cheddar cheese on the side.
